In Educating with Food in the Hudson Valley at PechaKucha Night New York Vol.16Lauren Maples walks us through the importance and strength of a sustainable, natural, and health-conscious education. While teaching yoga and dance in public schools, she developed the Bija approach - which strives to create a fulfilling and engaging educational experience. 

Lauren has danced with internationally acclaimed ballet companies including San Francisco Ballet and New York City Ballet, and holds a BA from New School.

Megan Cooke, director of Garden to Table Permaculture has a combined 20 years experience in horticulture, permaculture and outdoor education. For the past seven years Megan has managed Forster Community Garden, working with indigenous and local community volunteers to produce healthy chemical free food. Megan is passionate about teaching people the joys of growing and cooking their own organic food and sharing the knowledge she has learnt from her sustainable living journey.

For a child, a garden is more than a greenspace.  It can be a place for peace, learning, and ownership. School gardens have been a revisited movement that have caught much momentum in the United States, and Pond Gap Elementary is a local advocate.  Horticultural pedagogy is more than just seeing plants grow.  School gardens can be an alternative to a more natural and tangible outlet for school curriculum, therapy, and physical and emotional development.
